The captivation of asado is based in its simplicity. Fire, salt, meat. A shared meal can signify so many things, a change in life, a change in season, a meeting of hearts or minds. When merged with the sanctity of recent harvest, one animal whose days are filled with sun and green grass; chosen to complete its cycle on earth; it is an invitation for all to take part in the beautiful paradox of life.

Our asado is a whole lamb. We arrive with the equipment and wood, light the fire, and tend the meat.

Aidan learned the technique of lamb asado in Chile and has made it a staple of island summers for the past 4 years. We start our fires early in the day and allow the meat to cook for hours. Our fire roasted lamb will yield roughly 20-30 lbs of meat, which pairs amazingly with our chimichurri sauce, a slice of toasted bread and maybe even some wine. Simple is good.
